Honey Rabbit

Rabbit meat has a delicate consistency but is very tasty at the same time. Above all, it is a type of meat that is well suited to being stuffed and seasoned. Here is a recipe for preparing a rabbit with a side dish of potatoes, using our Pure Charisma Wildflower honey as dressing.

Ingredients for 4 people:

  • 1 rabbit roll
  • 1 shallot
  • 2 tablespoons of Pure Charisma Wildflower honey
  • vegetable broth
  • 1 lemon
  • black pepper in grains
  • 1 glass of white wine
  • sage
  • rosemary
  • bay leaves
  • extra virgin olive oil
  • salt
  • 300 g. of potatoes

Stuff the roll with aromatic herbs. Put it in the pan to brown with oil and half a shallot, when it is well browned on all sides, add white wine.

Cut the potatoes into small cubes and place them in the pan with the roll. Make them go on high heat for a few minutes.

Add the rest of the shallot, sage leaves, grated lemon rind and two tablespoons of Pure Charisma Wildflower honey along with lemon juice and a little black pepper.

Cover the saucepan with the lid and cook over low heat for about 40 minutes, if necessary add some vegetable broth. Adjust the salt at your taste, continue cooking for 10/15 minutes and serve.
